This refreshing summer dish is the perfect complement to any grilled food. Just toss everything into a large bowl and you’re done! Bonus- this is gluten free and vegan. Add 1/2 a red pepper or some sliced tomato for some added color. Give the bowl a quick toss before serving if the dressing seeps to the bottom. Also, make sure you drain and rinse the beans/corn well.
Place corn and both types of beans into a large bowl. Add in minced garlic, pepper, and onion.
Whisk together the olive oil, vinegar, red pepper flakes, sugar, and salt to make the dressing.
Pour the dressing over the vegetables and toss to coat. Chop up cilantro and gently stir to mix. Refrigerate until ready to serve.
