Pumpkin French Toast

Its the first day of September, and you know what that means! Pumpkin everything is popping back into your meal planning. I made one serving of these, tasted it, and continued on to make a whole batch! They were that delicious! Tastes like pumpkin pie.

Gather your ingredients.

In a medium bowl, whisk together milk, egg, pumpkin pie spice, pumpkin, and brown sugar until well mixed. Mixture will be thick.

Carefully dip 1 slice of bread into the bowl, flipping after several seconds to evenly coat on each side. Repeat with second slice of bread.

Spray a medium-low heated skillet with non stick cooking spray. Add bread to pan. Cook until the bottom side is a dark, golden brown. Flip over and continue cooking 2-3 more minutes. Serve with warm butter and syrup.

  • 1 egg
  • 1/3 cup milk
  • 3 tbsp canned pumpkin
  • 1 tsp brown sugar
  • 1/4 tsp pumpkin pie spice
  • 2 slices whole wheat bread
