Gluten free, pumpkin and spice filled energy bites make a perfect autumn on the go snack or morning pick-me-up. Amazing! Adapted from Gimme Some Oven.
Chop the dates. I cut them each into 4 pieces.
Combine the dates, honey, pumpkin puree, peanut butter, flax seeds, cinnamon, ginger, nutmeg and salt in the large bowl of an electric mixer. Fit with the paddle attachment and stir until combined.
Blend in the oats and coconut flakes until smooth and combined. Try adding 1/2 cup of pumpkin seeds for even more crunch. Cover and refrigerate at least 30 minutes.
Once chilled, use a spoon to shape the mixture into the desired size of energy balls. Shape it with the palms of your hands and place into a covered container. Store in the fridge up to 2 weeks.
