Gather your ingredients.
In a large bowl, combine pumpkin, sour cream, and chives.
Add chicken broth, cream, and salt. Beat mixture smooth with a hand held mixer.
Cover and chill the soup for at least 1 hour.
When ready to serve, garnish with parsley, dollops of additional sour cream, or green onion. This can be served chilled or heated up in a saucepan right before serving.
