This Meatball Sub on a Stick recipe is a fun spin on the classic! I used turkey for the meatballs so it’s low fat as well as delicious!

First, you’ll need 12 wooden skewers. Set these aside to use later on. Grate about 1/2 a cup of Parmesan. Preheat oven to 375 and line 2 baking sheets with parchment paper. Set aside.

In a large bowl combine ground turkey, bread crumbs, Parmesan, oregano, basil, parsley, red pepper flakes and garlic. Form into 1 inch meatballs.

Starting with one breadstick at a time thread the dough then meatball. Repeat the process with 2 more meatballs alternating dough-meatball, ending with dough. Make sure to spread the dough and meatballs away from each other so the meatballs bake through and the dough has room to expand. Bake for 20 minutes until the meatballs are cooked through. Remove from oven and sprinkle each skewer with 1 tablespoon of shredded mozzarella cheese. Place back in oven for 2 minutes until cheese is melted. Serve immediately with marinara sauce for dipping. I prefer to use make my own marinara – makes all the difference!

Ingredients
  • 1 pound ground turkey
  • 1/2 cup Italian bread crumbs
  • 1/2 cup Parmesan cheese grated
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1/4 cup parsley chopped, or 1 tbsp dried
  • 1/2 tsp red pepper flakes
  • 3 cloves garlic minced
  • 1 can breadsticks Pillsbury
  • 1 cup mozzarella shredded
  • marinara sauce for dipping
