Kicking off this long Labor Day weekend with some fruity, chunky, mango peach salsa! The refreshing combo of mango, peaches, red pepper, onion, and cilantro is the perfect way to ring in the end of summer- with it’s best features. I like to serve this salsa over grilled chicken or fish as a healthy alternative to sauce, or dunked with some crispy tortilla chips, but I was so impressed with the amount of sweetness and flavor that I had to try a couple bites by the spoonful. The trick here is to pick up some in-season peaches (like now!) and let them sit on your counter until they are nice and ripe, but not so much so that they’ll fall apart during peeling and cutting. As far as mangos go, choose one that gives a little when squeezed. Then it will be ready to shine as the star player in this salsa. Throw all those fresh fruits and veggies into a large bowl and top it off with some lime juice and a sprinkle of cayenne- you’ll be good to go for your Labor Day BBQ!

Start with a whole bunch of fresh fruit and veggies.
Combine the mango, peaches, onion, bell pepper, and green onion in a large mixing bowl.
Add in the freshly chopped cilantro, cayenne pepper (add 1/4 teaspoon if you like a little more kick), and juice from 2 limes. Gently stir to combine and season to taste with salt and pepper.
Serve it in a big party bowl with baked tortilla chips.

- 3 peaches peeled, diced
- 1 small onion diced
- 1 red bell pepper seeded, diced
- 3 green onions thinly sliced
- 2 tbsp cilantro freshly chopped
- 2 limes juiced
- 1/8 tsp cayenne pepper
- salt to taste
- black pepper to taste
