Tired of using ground beef on the grill for burgers? Try it on a stick instead! Serve with an easy to make lime mint yogurt dipping sauce.
Soak 8 long wooden skewers in a bowl of water for about an hour before using. This will prevent burning. Preheat the grill.
Chop the mint and mince the garlic.
In a medium bowl, gently whisk together the egg, garlic, curry powder, oregano, and tomato paste.
Add the ground beef and season with salt and pepper. Quickly mix everything together with your hands. Try not to overmix the ground beef, as its texture is best when it remains a bit coarse. Divide mixture into 8 parts.
Carefully form each portion into a thick cigar shape around the middle of the skewers. Drizzle skewers with olive oil and set aside.
Stir the yogurt, mint, lime zest, and juice together to form the dipping sauce.
Grill the skewers, turning frequently, until they’re nicely browned, juicy, and tender, 6-8 minutes. If the heat is too high or the meat is accidentally overcooked, the skewers may fall apart, as the structure of the meat literally breaks down. To flip the skewers on the grill, use two spatulas to roll the skewers or they may fall apart. Serve with dipping sauce.
