Quick and easy baked spinach dip in portion sized ramekins! Serve these individually so everyone gets their own.
Preheat oven to 375. Wash, dry, and chop up spinach.
Add all ingredients into a mixing bowl. Stir until evenly combined.
Divide mixture between 4 small ramekins. You can use a small casserole dish as well. Just increase the baking time by about 15 minutes. Place ramekins on baking sheet and bake 15-20 minutes. Top with extra cheddar and serve warm with pita chips, carrots, or bread.

- 4 ounces spinach chopped
- 1/2 cup mayonnaise
- 1/2 cup shredded cheddar
- 1/4 cup Parmesan cheese grated
- 2 cloves garlic minced
- 1/4 cup onion diced
