Bark is one of the easiest desserts to whip up. And when I say easy, I’m talking 4 ingredients and 5 minutes of your time. AND you can add just about anything you’d like into the mix. I love love love anything with a fruit and chocolate combination, so naturally that had to happen. When I’m feeling up to it, I usually put in the extra effort to make my own candied cherries. Today, however, I was so thankful that I had a bunch of Paradise red cherries to play with. With Thanksgiving this week, and a whole lot of holiday travel coming up, I’m all about the ready-made candied cherries. I added in some chopped pretzels for a salty crunch for another winning combo- sweet and salty. This bark makes a bright addition to a cookie tray or even to put into individual tins or goodie bags for hostess gifts. It takes up about 5 minutes of your time, then the fridge takes the chocolate from melted to break-apart bark.
Eat all the smaller pieces yourself, no one wants those ones anyway.
I used about half of an 8 ounce container of Paradise brand red cherries. You should be able to find this in the baking aisle of most grocery stores (especially around the holidays), or you can get it online.
Spread the candied cherries and chopped pretzels on a parchment-covered rimmed baking sheet in an even layer. Set aside.
Melt the white chocolate and the vegetable oil together in a double boiler over medium heat. Stir until just smooth and melted.
Pour the melted chocolate over the cherries and pretzels and gently spread evenly.
Refrigerate until hard, or overnight.
Break into pieces and store in an airtight container in the fridge.
