This is my favorite summer time appetizer recipe. It’s light, sweet, flavorful, and easy! A toasted baguette with goat cheese spread, topped with fresh strawberries, basil, and strawberry vinaigrette means you can’t go wrong!
Dice the strawberries. Preheat oven to 425.
Combine the strawberries and sugar in a small bowl, toss gently to coat. Let sit about 30 minutes to let the berries macerate and release their juices.
Meanwhile, lightly spray a baking sheet with cooking spray. Slice the french bread on a slight diagonal. Add bread slices to baking sheet and heat until lightly toasted, about 5 minutes.
Spread a thin layer of goat cheese on top of each baguette slice. Top each slice with a spoonful of the strawberry mixture.
Drizzle lightly with olive oil and strawberry vinegar. Top with the chopped basil leaves and fresh black pepper, to taste.
