This is one my favorite snacks from Starbucks, and now I can make it at home! A light vanilla and lemon flavored loaf with sweet lemony glaze.
Preheat oven to 350. Generously grease a 9×5 inch loaf pan with non stick cooking spray.
Combine flour, baking soda, baking powder and salt in a large bowl.
Use an electric mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl. Blend until well combined.
Pour wet ingredients into the dry ingredients. Whisk until smooth. Add oil and mix well.
Pour batter evenly into greased loaf pan. Bake for 35 minutes or until a toothpick stuck into center of the cake comes out clean.
Once the cake is cooled, prepare the lemon icing. Combine all the icing ingredients in a small bowl with an electric mixer on low speed. Blend until smooth and slightly thickened.
When the loaf is cool, remove it from pan and frost the top with the icing. Let the icing set up before slicing.
