Happy St. Patrick’s Day! Here’s a lightened up version of a mint chocolate milkshake to satisfy your St. Patty’s Day cravings without the guilt. This time of year we usually end up with a whole bunch of boxes of Thin Mint Girl Scout Cookies, but there’s nothing thin about them. As delicious as they are, they’re loaded with calories. This smoothie reminds me of Thin Mints, but with lots of healthy swaps like spinach, avocado, and dates. The bananas and avocado blended together make this smoothie SO creamy. I used unsweetened almond milk as a base and a bit of raw cocoa powder. The dates are sweet enough on their own. Cheers to the Irish!
Made with fresh, wholesome ingredients like almond milk, bananas, spinach, mint leaves, avocado, and dates!
Blend the almond milk, spinach, and mint together in a large blender. It will become a little frothy from the milk.
Add in the frozen banana, avocado, dates, and cocoa powder. You want to make sure and add in at least 1 frozen item, either bananas or avocados work. Blend until smooth. Pour into 2 large glasses and garnish with dark chocolate chips. Serve cold.
- 2 cups almond milk unsweetened
- 1 1/2 cups spinach
- 1/2 cup mint leaves
- 2 bananas frozen
- 1/4 cup avocado chopped
- 4 dates pitted
- 2 tbsp cocoa powder unsweetened
- dark chocolate chips for garnish, optional
- Blend the almond milk, spinach, and mint together in a large blender.
- Add in the frozen banana, avocado, dates, and cocoa powder. Blend until smooth.
- Pour into 2 glasses and garnish with dark chocolate chips. Serve cold.
