This is a great, healthy alternative to pizza. Roasted garlic has so much flavor, especially combined with the red onion and fresh herbs.
Preheat oven to 450 degrees. Grease a baking sheet and sprinkle with cornmeal.
Heat chicken in a medium pan until lightly browned and cooked through.
Meanwhile, melt butter in a small saucepan. Saute roasted garlic for 1 minute. Add flour, and mix until well blended. Cook for 1 more minute. Slowly whisk in the milk and half and half. Stir in the pepper.
Cook for about 3 minutes, or until it starts to thicken. Remove from heat, and stir in Parmesan cheese. Set aside.
Dice about 1/4 of a red onion.
Once chicken is cooked through, let cool slightly and shred using paddle attachment of electric mixer.
Spread dough into roughly a 12 inch circle or square on prepared baking sheet. Spread white cheese mixture over the dough.
Top with chicken, red onions and mozzarella cheese.
Bake for about 17 minutes, or until the crust is golden, and the cheese is melted.
Remove from the oven, sprinkle with herbs. Cut and serve immediately. Be creative with your herbs. I added some basil as well.
