Easy puff pancake filled with savory pumpkin and spices. You won’t believe how easy this is to make!
Preheat oven to 400. Put 9 or 10 inch cast skillet into the oven while it is preheating to warm it up.
Whisk eggs in a large mixing bowl until smooth. Stir in flour and salt. Mix well.
Add in milk, pumpkin, nutmeg, cinnamon, allspice, ginger and vanilla. Mix and set aside.
Once preheated, remove skillet from oven and add butter. Swirl pan around to coat with melted butter. If it doesn’t fully melt, place it back in the oven for a minute or so. Pour batter over melted butter.
Bake for 20-25 minutes, or until golden around the edges. Serve warm with powdered sugar or syrup.
