Pumpkin Bisque

Gather your ingredients.

In a large bowl, combine pumpkin, sour cream, and chives.

Add chicken broth, cream, and salt. Beat mixture smooth with a hand held mixer.

Cover and chill the soup for at least 1 hour.

When ready to serve, garnish with parsley, dollops of additional sour cream, or green onion. This can be served chilled or heated up in a saucepan right before serving.

  • 1 large can pumpkin
  • 1/3 cup sour cream
  • 5 green onions chopped
  • 2 cups chicken broth
  • 1 cup whipping cream
  • salt to taste
Instructions
  1. In a bowl, combine pumpkin, sour cream, and chives. Add chicken broth, cream, and salt.
  2. Beat mixture smooth with rotary beater.
  3. Cover and chill the soup for at least 1 hour.
  4. When ready to serve, garnish with parsley, dollops of additional sour cream, or green onion. This can be served chilled or heated up in a saucepan right before serving.
