We’ve finally made it to a long-awaited Spring, and I feel like celebrating. The sun is out, our overflowing pond is starting to dry up, and I’m feeling like something fresh and vibrant! This is a sweet and healthy smoothie that will have you feeling all the Spring vibes. Cherries bursting with antioxidants, Vitamin-C rich pineapple, and mood boosting bananas. I added in a heaping handful of spinach to keep this a ‘green smoothie,’ but to me it tastes like a pineapple upside-down cake. I know that removing the pits from fresh cherries can be a bit tedious and messy. I recommend buying the fruit frozen so the pits are already removed, PLUS it will make your smoothie cold. Win-win. Made with 5 simple ingredients. Add in a teaspoon of flax or chia seeds to bulk it up.
Add the almond milk, spinach, banana, pineapple, and frozen cherries into a large blender in that order. You can either use frozen pineapple, (I like to cut up a fresh pineapple and store the chunks in the freezer), or frozen cherries. Frozen cherries are easy to work with since they’ve already been pitted. Just make sure at least 1 fruit you add in is frozen to keep the smoothie cold.
Blend for 30 seconds, or until smooth. This recipe makes 2 smoothies. Pour into glasses and garnish with a slice of pineapple and some cherries. Serve cold.
- 2 cups almond milk unsweetened
- 2 cups spinach
- 1 banana
- 1 cup pineapple chopped
- 1 cup frozen cherries pitted
- Add the almond milk, spinach, banana, pineapple, and frozen cherries into a large blender in that order.
