I brought this to a BBQ the other day and didn’t get to bring any home. Loaded with bacon, cheddar cheese, green onion, chopped red potatoes, must be good!
Chop potatoes into chunks and dice green onions.
Boil potatoes until they are just shy of being cooked. Drain.
Meanwhile, heat bacon until crispy. Chop into bite sized pieces.
Combine sour cream, mayonnaise, salt, pepper, and garlic in a large bowl. Add in green onion and chopped bacon.
Stir in potatoes and mix well. Chill in the refrigerator for 1 hour.
Add shredded cheese to cooled mixture and stir well. Keep chilled until ready to serve. This recipe makes a pretty large batch. You can easily cut it in half for a smaller portion.
