There is a nice hint of lime that pops with the honey marinade mixture. These are quick and easy to make, especially on the grill. Serve over a bed of rice or steamed vegetables.
Soak 5-6 wooden skewers in water for about 20 minutes. Cut chicken breasts into large chunks and set aside.
Mix the soy sauce, oil, garlic, honey, and garlic powder into a shallow dish. Juice 1 lime and add into the marinade. For a zestier version, add a teaspoon of freshly chopped cilantro to the marinade.
Thread chicken onto the soaked skewers and marinate for at least 30 minutes in the refrigerator, spooning juices over the chicken.
While chicken is marinating, prepare grill to medium high heat. Once heated, add chicken skewers and heat until no longer pink, about 10 minutes, flipping halfway through cooking time.
