I think I might have told you already how much I love seafood? Yup I definitely have, because it’s always high on my list of go-to meals. Not only is it healthy and versatile, it’s so quick and easy to prepare on busy weeknights. This fresh and vibrant grilled salmon with warm pineapple salsa comes together in under 30 minutes. To make it happen, get your salsa going first so it can rest and the flavors can meld together. Then pop your salmon fillets on the grill or in the broiler until the outside is flakey and crispy. Serve over a bed of brown rice with a fruity drink and enjoy the weekend!
You’ll need 4, 6 ounce fillets, or 2 if you want to halve the recipe.
I love this pineapple salsa- red pepper, green onion, garlic, lime, and cilantro. Serve warm with a slotted spoon.
Let’s start with the salsa. Heat a large saucepan over medium high heat. Add butter and heat until bubbly. Add in your minced garlic and saute for 2 minutes or until fragrant. Add diced pineapple and saute another 2 minutes. You can totally used canned diced pineapple, just be sure and drain it before using.
Add in the red pepper, green onion, lime zest and juice, and honey. Stir and bring to a boil. Reduce heat to medium and let simmer until the salsa has slightly thickened, about 3-5 minutes.
Top with some freshly chopped cilantro.
To cook the salmon, preheat your grill or broiler. Summer’s not over yet- keep that grill out! (Unless you’re like me and can’t grill cause it’s raining. boo). Mix some salt, pepper, and vegetable oil together in a small bowl. Rub all over the surface of the fish.
Grill or broil the salmon about 10 minutes per inch of thickness or until cooked through. Mine took about 15.
Top with a whole bunch of that warm pineapple salsa and enjoy!
