Grilled pork tenderloin with orange and lime flavors mixed with a ginger and teriyaki marinade.
Squeeze the juice from 2 oranges and 1 lime into a glass.
Add in the other ingredients besides the scallions to make the marinade and stir. Add a 1/2 cup of ground tamarind concentrate in your marinade if you want to give it a little kick. The teriyaki sauce can be replaced with soy sauce as well.
Pour into a seal-able bag with the tenderloin and refrigerate at least overnight. The hard part is over!
Preheat outdoor grill. Brush with a small amount of olive oil. Remove the tenderloin from bag, reserving marinade. Grill for about 30 to 40 minutes over medium heat. Allow meat to sit for about 10 minutes before slicing into two inch serving pieces. Side note- If the thought of grilling a tenderloin worries you too much, an alternate method is to heat the oven to 350 and roast for about 45 minutes.
Bring reserved marinade to a boil in a small saucepan. Then lower the heat until it is at a gentle simmer, stirring occasionally. Drizzle a small amount of marinade over each slice, and top with sliced scallions.
