These yummy Greek chicken burgers have become one of my new favorite dinners! I love anything with feta, cucumber and dill!

About 1 hour before you are ready to eat, peel the cucumber and scoop out the seeds with a spoon. Chop into small pieces. Place in a colander with salt over a paper towel and let sit.

Meanwhile, grind 1 sandwich flat, or 1/2 half pita pocket in a food processor.If you don’t have a food processor, a blender will work just fine!

Chop the mint and set aside. Chop the dill and set aside.

Place ground chicken in large mixing bowl. Add in salt and pepper, feta crumbles, a pinch of dill and mint, as much minced garlic as you’d like, and the ground pita. Add in the egg.

Using your hands, thoroughly combine the meat mixture.

Form meat into 4 patties and place on wax paper covered with non-stick spray.

Cook on a hot skillet with non-stick spray for about 8 minutes per side, or until the internal temperature is over 150 degrees.

Meanwhile, prepare Tatziki sauce. Add salted cucumbers to food processor along with the Greek yogurt.

Juice 1/2 of a lemon. Add the remaining chopped mint and dill to the food processor, juice of the lemon, salt and pepper, and as much additional garlic as you’d like. Blend until smooth. Adjust seasonings to taste.

Spread Tatziki sauce on both slices of bread (or pita) and top with burger and optional garnishes.

  • 1 pound ground chicken
  • 6 ounces feta cheese crumbled
  • mint finely chopped
  • dill finely chopped
  • 4 cloves garlic minced
  • 1/2 pita pocket ground
