These fudgy cherry brownies are filled with chopped chocolate, candied cherries, and dreams. Anything that combines fruit and chocolate together is on my list of must-haves, and this recipe probably takes the cake. Except these brownies are better than cake.
So it’s Valentine’s Day and we’re doing it right. Something chewy and chocolatey with bursts of sweetened fruit. Candied cherries are really easy to make and in my last post I explained in detail how to make them if it’s not the holiday season and they aren’t readily available. They give these fudgy brownies small bites of fruitiness. The chocolate batter is whisked together in one bowl, so no electric mixer is required. Plus we’re using quality melted chocolate AND chocolate chips here, in case there was any doubt that these aren’t irresistible brownies. You’ll need a cups worth of candied cherries for this recipe, (although if you’re looking for a killer plain brownie recipe just omit the cherries). I show in step-by-step detail how to make candied cherries HERE. They are really easy to make and give these brownies a little something extra.
Adjust the oven wrack to the lower third position and preheat to 350. Line the bottom of a 9×9 baking pan with aluminum foil, hanging the ends off the side. This will make your life a whole lot easier when lifting the brownies out of the pan. Lightly spray with non stick cooking spray and set it aside. Whisk the flour, cocoa powder, and salt together in a medium sized mixing bowl. I use unsweetened cocoa powder – fyi.
Melt some chopped semisweet QUALITY chocolate with a stick of butter in a small saucepan. You can really taste the flavor of this melted chocolate in this recipe, so make sure you use something you like. Stir until just combined. Remove from heat and pour the chocolate into a large mixing bowl. Let it cool down for about 10 minutes.
Whisk both sugars into the cooled chocolate mixture. Add in the eggs, one at a time, whisking until combined. Stir in the vanilla. Add the flour gradually to the wet ingredients so the batter really has time to absorb the flour.
Gently fold in the chocolate chips and candied cherries. Yummm.
Pour batter into prepared baking pan and smooth out the top. Bake in preheated oven for 35 minutes, or until toothpick inserted in the middle comes out clean. I’d recommend checking on your brownies after 30 minutes to see how they’re looking. Keep the brownies in the pan on a wire wrack until they have completely cooled. That’s the hard part. Lift the foil out of the pan and cut into squares using a clean, sharp knife.
