Sophisticated look, but easy to prepare shrimp scampi. Serve over angel hair pasta. The only thing I would add is more fresh lemon juice; it really brings out flavor! This is an easy weeknight dinner filled with Parmesan, bread crumbs, and oregano.

Prepare your angel hair pasta according to package directions. Heat olive oil and butter over medium high heat in an oven safe skillet (I used cast iron) until butter has melted. Add in minced garlic and saute for 1 minute, stirring occasionally.

Stir in the shrimp, lemon juice, pepper and oregano. Cook and stir 3 minutes, or until the shrimp turn pink.

Remove from heat and sprinkle with all the good stuff- bread crumbs, parsley, and grated cheese. Preheat your broiler.

Broil 6 inches from the heat for 2-3 minutes, or until topping turns a light golden brown. Serve with pasta. Be sure and ladle that delicious sauce all over your noodles.

  • 1 pound shrimp medium in size, peeled and deveined
  • 4 cloves garlic minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/4 cup lemon juice fresh is best
  • 1/2 tsp black pepper
  • 1/4 tsp oregano
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup bread crumbs
  • 1/4 cup parsley minced
