Sliced up carrots tossed with olive oil that taste like fries! Store these in an airtight container in the fridge and pull them out for a quick snack.
Preheat oven to 350. Lightly grease a large baking sheet.
Toss carrots in a bowl with olive oil. Add in a bit of salt, stir, add a bit more, and stir again. You can use more/less salt depending on your preference.
Lay the carrots on the greased baking sheet in as flat a layer as possible. Try not to overlap. Bake 15-30 minutes, or until crispy. Check on them every 10 minutes or so.
