You know when you have a cookie craving and you need some chocolaty, peanut buttery cookies like NOW? Just me? Okay, well if and when that does happen to you, I have the perfect peanut-butter solution. These cookies are insanely addicting. I’m pretty sure I made 4 batches last month, with hopes of at least some cookies making it into the freezer, but nope, they were all eaten almost immediately. The problem is, they are way too easy to make. You can literally throw these flourless, protein-packed, peanut butter chocolate chip cookies together in under five minutes. AND I’m 99% sure that you already have all 5 ingredients in your pantry. So basically there is nothing stopping you from baking some homemade cookies next time you have 5 minutes and 5 ingredients to spare. You’re welcome.
Each batch makes between 12 and 15 cookies. I’ll make some again to freeze and then thaw so I can share how they hold up, but no promises they’ll make it into the freezer. Again.
Add some light brown sugar, creamy peanut butter, 1 egg, and some baking soda into a bowl and mix until smooth and combined.
Fold in some semi-sweet chocolate chips.
Scoop the dough into 1 1/2 inch balls and place onto a baking sheet. I usually get between 12-15 cookies when I make these, so space the dough out accordingly. As you can see, the cookies don’t spread too much in the oven. Bake for 10 minutes at 350, until the tops are golden.
By the way- these peanut butter cookies taste even better the next day after the flavors have built up. So try not to eat them all on day 1.
